Hello Bakers,

I have a friend who is taking baking and cooking classes and when searching for online resources I came across a free PDF version of the book " How Baking Works" Exploring the Fundamentals of Baking Science, by Paula Figoni.  It is an older version by I am sure not much has changed in the sense of the science, may the techniques and recipes but hopefully it provides some useful information for the beginning baker or anyone interested. I found it, and would like to share with anyone who is interested.
